Strawberry Pie

It's always interesting to make things from scratch for the first time. This was my first experience in making pie crust on my own, well in making pie actually, hahaha. I had wanted to make pies since long time ago. (why are there so many things I wanna make since long time ago? :p) Enough talk, before I'm bubbling too much. Let's just go to the recipe shall we?

Strawberry Pie

Pate brisee (pie dough)
Makes 1 double crust or 2 single crust, 9-10 inch pies
This recipe only use 1 single pie, so the other half of dough can be used for another pie :D

Ingredients :
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter chilled and cut into small pieces
1/4 to 1/2 cup ice water
How to :
  1. In the bowl of a food processor, combine flour, salt, and sugar. Add butter, and process until the mixture resembles coarse meal, 8 to 10 seconds.
  2. With machine running, add ice water in a slow, steady stream through feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time.
  3. Divide dough into two equal balls. Flatten each ball into a disc and wrap in plastic. Transfer to the refrigerator and chill at least 1 hour. Dough may be stored, frozen, up to 1 month.
Strawberry Filling 
Ingredients :
4 cups strawberry, hulled and halved
1 cup sugar
1/3 cup corn starch
1/2 tsp cinnamon powder
2 tbsp butter

How to :
  1. Mix all ingredients, except butter, untill no more white part of corn starch is seen in the mixture.
  2. Prepare the pie crust by rolling it into 1/8 inch thickness, line it on a pie pan.
  3. Pour the strawberry mixture on the pie crust, and dot fruit with butter.
  4. Bake in 200'C preheated oven for about 10 minutes, turn down the temperature to 180'C and bake for another 40 minutes or until the crust turns slightly brown.
  5. Let it cool, ready to serve.
